Christmas Fruit Cake Recipe

Christmas festival to celebrate the birth of Jesus Christ looks to be not complete without Christmas cakes.
Lets here is how to make Christmas fruit cake recipe:

Ingredients:
• 1 1/2 cups whole blanched almonds
• 2 cups light and dark raisins
• 1 cup currants
• 2 1/2 cups chopped dates
• 2 1/2 cups candied citron peel
• 12oz of maraschino cherries
• 1/2 cup fruit juice
• 19oz of crushed pineapple
• 2 cups granulated sugar
• 1/2 cup reserved cherry juice
• 1 cup strawberry jam
• 4 cups flour
• 2 teaspoons ground cinnamon
• 1/2 teaspoon ground cloves
• 1/2 teaspoon allspice
• 1 teaspoon salt
• 1 1/2 teaspoons baking soda

How to prepare?


Take a large bowl and add the ingredients of almonds, light & dark raisins, currant, dates, candied citron peel. Drain a 12oz bottle of maraschino cherries and add them to the mixture in the bowl. Pour fruit juice and cover the bowl with plastic wrap. Leave it at room temperature for the whole night.

Take saucepan; simmer one 19oz crushed pineapple with 2 cups granulated sugar and stir it for 45 min until it gets thickened.
Mix the cooled pine apple and strawberry jam. Make sure to cool good before you add it to the cake batter.

In second day, add the ingredients of flour, ground cinnamon, ground cloves, allspice, salt, and baking soda in a large cup. Add about a cup of the flour mixture to the fruit and nuts.

Cream granulated sugar with 1 pound butter in a large bowl. Beat 12 eggs. Add flour mixture and pineapple mixture and stir them into the butter and egg mix. It becomes pink color and pours over flour-coated fruit and nuts and mix well. Pour into pans and chuck them in the oven and place a shallow pan of water on the bottom rack of the oven to keep the cakes moist. Bake in oven for 4 hours, for the larger cakes. Removed the cakes from the oven let them cool completely. Overlay with plastic wrap and add cheese cloth. Plop cake in centre and wrap the cheesecloth tightly around the cake.
Finally the cakes will be good eating on three weeks, for the holidays.
